DIRECTIONS

STEP 1

Put the cooked chickpeas in a large bowl and add the cheese, cherry tomatoes, and cilantro. Stir them gently.

STEP 2

Add the lemon juice, olive oil, and salt, and stir again.

STEP 3

Serve the salad immediately or refrigerate it to serve later as a refreshing summer appetizer. I recommend preparing it with cow's cheese.

  • 400 g of boiled chickpeas
  • 200 g of cubed cheese
  • 200 g halved cherry tomatoes 
  • 1 small red onion, sliced
  • 1 handful finely chopped fresh coriander 
  • freshly squeezed juice of 1 lemon
  • 3 tbsp. extra virgin olive oil
  • pinch of salt
