DIRECTIONS

STEP 1

Cook the fusilli according to the package instructions. Drain and let them cool.

STEP 2

Place the broccoli in boiling water for 2-3 minutes until softened. Immediately drain and cool them under cold running water to retain their fresh color.

STEP 3

Meanwhile, fry the bacon in a small pan for about 5 minutes until crispy, without adding any additional fat. 

STEP 4

Place the pasta in a large salad bowl. Add the broccoli, bacon, walnuts, parsley, mint, and onion, and mix. 

Add lime juice, sugar, salt, and mayonnaise, and mix again. 

STEP 5

Finally, add the cheese and grapes, and gently mix them into the salad.

I recommend preparing it with sheep cheese.


INGREDIENTS 

  • 300 g fusilli (type of pasta)
  • 300 g broccoli, cut into small florets
  • 100 g thinly sliced bacon, diced
  • 100 g roasted walnuts
  • A handful of freshly chopped fresh parsley
  • ½ handful of finely chopped fresh mint
  • 1 finely chopped red onion
  • Freshly squeezed juice from 1 lime
  • A pinch of powdered sugar
  • A pinch of salt
  • 150 g mayonnaise
  • 100 g diced cheese
  • 150 g halved red grapes
