DIRECTIONS
STEP 1
Eggplants are washed, dried and cut lengthwise in the shape of a fan, not cutting all the way to the end.
STEP 2
They are well salted from the inside and left for about 1 hour to release their possible bitter juice. Then they are washed and dried again.
STEP 3
The tray in which they are baked is covered with baking paper and lightly greased with oil. Eggplant fans are placed at the bottom.
STEP 4
A thin piece of cheese, tomato, garlic is placed in each slot, and finally sprinkled with grated dry thyme. Lightly shape the fans, drizzle with oil and add 4 tbsp. to the bottom of the pan. water.
STEP 5
Cover with aluminum foil and put the dish to bake in an oven heated to 190 degrees. Bake for about 45 minutes, then remove the foil, bake a little longer /until any liquid evaporates/ and sprinkle with grated cheese.
STEP 6
The finished eggplant fan is served warm, sprinkled with finely chopped parsley.
